Bring in your field-dressed deer during business hours no appointment needed during hunting season. We accept both whole carcasses and boneless trim. There will be a deposit fee and potentially a disposal fee during this step.

We’ll walk you through a simple cut sheet where you can customize the exact cuts, sausage types, and packaging you want.

3. Expert Butchering

Our skilled team processes your venison carefully, keeping your meat clean, labeled, and separated.

4. Pickup & Payment

We’ll notify you when your order is ready. Come pick it up at our Mauston location all products are frozen, vacuum-sealed, and ready for your freezer.

Venison Cuts

As often is the case with deer season, how you want your deer cut up can be confusing. We thought that putting a simple explanation of the standard cuts, with some pictures, might help you when giving your instructions. Besides getting a large amount of sausage made from your deer, you may decide to feed your family with some steaks, chops, roasts and burgers. We cut each deer separately and evaluate the level of damage each carcass has received. Then we read the cutting card you filled out and proceed with the processing. 

Steaks

Venison steaks are sliced from the hindquarters and wrapped two per package. They are medium to thin cuts (1/2" to 3/4"), lean, and contain a small round bone. Marked "Steaks."

Chops

Our chops are always boneless and cut from the backstraps. These can be left whole or butterflied to medium-thin steak size. Wrapped four per package and marked "Chops" or "Loin."

Roasts

We offer boneless neck roasts, arm roasts, and hind roasts if the deer carcass is suitable. Most customers opt for one high-quality roast. If unsure, it’s best to skip roasts to avoid waste.

Note: If you are not sure if you want roasts, we suggest you don't get them, or ask for "one" of the "best only".  Most roasts end up here in ten months to make more sausage.


Ground Venison

All trimmings are ground unless otherwise requested. You can split your order any way you’d like—some for burger, some for sausage. We recommend adding beef or pork (30%) to improve flavor and moisture. We never use lard or beef tallow—only quality meat.
